VEGETRIAN CHILI #1

1 ONION, CHOPPED
1 CARROT, SLICED
3-4 CLOVES GARLIC,SMASHED
1 LARGE CAN WHOLE TOMATOES (FRESH IF POSSIBLE)
1 CHAYOTE, ROUGHLY CHOPPED
2 POBLANOS, ROUGHLY CHOPPED
1/2 PKG CORN
1 LARGE CAN BLACK BEANS, DRAINED AND RINSED
1 LARGE CAN KIDNEY BEANS, DRAINED AND RINSED
3-4 TBSP CHILI POWER...OR MORE LOL
1-2 TBSP CUMIN OR MORE TO TASTE
Saute the onions, carrots and garlic in a little oil. Add the tomatoes, chayote, pobalanos and bring to a simmer. Add corn, beans and spices. Simmer a few minutes. Season if you want to. Cool to serve with cheese on top. Also good with Corn tortillas or chips.
